Our story
Chef and Founder Evan Lindley fell in love with cooking at a young age in his Grandma’s kitchen. His first memories involve kneading and baking bread together. Every smell, taste, and texture from that process stuck with him, instilling the belief that food was more than just sustenance.
After an upbringing full of experimentation in the kitchen, Evan moved to New York City to study Chemistry and Food Science where he applied his passion for cuisine. Along the way to becoming a food scientist, he sought out any opportunity to get into the kitchen again, whether at restaurants or friends’ apartments.
As a long admirer of the fine dining greats in Chicago and New York, Evan aspired to cook with the same level of intention and meaning as his idols. He wanted to talk about his life and loved ones with his cooking. It started slowly with individual dishes, then dinner parties in dorms, and then finally full tasting menus for friends and family. He built technique through trial and error, and still is to this day.
In the fall of 2022, Evan took a leap of faith to do a food pop-up at his friends’ Jazz concert. He cooked pork while everyone vibed out to Jazz in East Williamsburg and Jazzy Pig was born.
A few months before that pop-up, Evan met Lauren. They shared stories, laughs, and dreams over many meals until they became partners, in life and in craft. As Jazzy Pig materialized, Lauren brought to the table all that was missing; years of serving and bartending experience, an eye for design, and creativity that spans across all mediums of art.
Together, we utilize our individual backgrounds to create a unique, downright fun dining experience. It’s a crossover between art and science, food and performance, stories and magic—we get goosebumps just thinking about it.
